Arugula is a leafy green I just started using recently and every day I get a little bit more delighted to whip up a recipe that includes this ultra healthy veggie.
Arugula contains high levels of chlorophyll - or green blood as many like to call it (will posting all about chlorophyll benefits soon!), contains B vitamins which is a skin/hair/nails stimulator, and is a staple to nosh on when you are detoxing.
I put together this breakfast recipe that can really be enjoyed at any time. It's packed with iron and protein from the egg, and many beauty boosting nutrients and antioxidants from the arugula and seasonings.
* 1 large egg
* as much arugula as you want
* 1/2 tbsp turmeric
* 2 tsp minced garlic
*red pepper flakes
* fresh ground black pepper
* coconut oil
Heat a skillet coated with coconut oil, then sautee arugula and all seasonings. cook for about 5 minutes or until arugula is wilted. Serve on a plate and cover it with another plate to keep warm.
In another skillet coated with coconut oil (or you can use the same skillet), simply cook up a fried egg to serve on top. Sprinkle the dish with Himalayan salt and pepper, then serve! It is SO easy!
I like to cut up and mix the over easy egg in with the arugula once it is served so that the yolk mixes in with everything else. It is absolutely scrum-didly-umptious.
